This is the test report for our EVO oil Kora with really good value. Acidity 0.2 and something not so often mentioned but more important Peroxide 3.8
What is Peroxide?
Think of it as the age of the olive oil, like a selphy you take today of yourself that reveals how old you are now… the lowest peroxide the youngest, the freshest oil you got.

What affects peroxide levels. Do they still increase if the oil is stored without light or oxygen? Also, it says USA olive oil…. Is this from olives grown in the US?
