We harvested a few more Sunflowers today but to our surprise, the seeds seem to be totally white!?!
Is this normal? Is this a specific type? Aren't they ready yet?

Sunflower seeds can be both all black or a muted white/black like your second pic. You got that one right on time!
Could have harvested the heads in the first pic a little earlier so you don't lose any seeds. But they are still viable for eating and reseeding.
I find the white/black seed varieties have the most meat in their seed, thus the most tasty.
The missing seeds will likely make an appearance next season!

As this is the first time that we grow Sunflowers, we are not sure which is exactly the right moment to harvest the heads.
Some sources says banana yellow, others say more brownish.
I kept them a little longer as I thought that the (almost) seeds in the middle would swell eventually but this didn't happen.
I will harvest the next ones a little earlier.
