There have been people trying to let others know for over 100 years that humans can thrive on an all-meat diet, but it took people that were willing to try anything to help cure their "incurable" diseases that are allowing the truth slowly come to light.

How much resources would the entire global population switching to an all meat diet consume? Or let's say 25% of the world population doing that?
Your question illustrates the type of thinking that caused this problem. Step one is to figure out what is optimal for human health now that natural selection rarely takes place for humans. Step 2 is to figure out what would make that sustainable.
The problem was switching to plant based foods. It created overpopulation, made slavery easier and cheaper, and allowed for massive dysgenics. Now our economy is based on never-ending growth, so there is a massive propaganda push to go all plant.
I understand your argument, but it doesn't answer my question.
