So I made a new Health Journal stream! I might try using it in the ways I'm talking about and see how it works/fails. The main issue I foresee is that it needs to be timestamped and searchable by date.

I might want to look up a journal entry a month ago today, for instance, or, in an ideal world, on a particular day of my cycle - but that's next level stuff.

Yes, that would work.
In the ideal scenario, I'd be able to represent the day/week/month visually somehow, giving it a traffic light colour, so I can see an overview and potentially be able to anticipate problems in following months. But again, that's all super specific.
I'd like to be able to pull out notes in which I made discoveries, or learned something and put them as sticky notes in my Stack, but I think it already allows for all that.
