Here is a really interesting theory that I think contradicts this view?

Yep, sounds a lot like Kant's response to Descartes' doubt. He, too, thought space and time are categories of the understanding (as he put it) rather than things in the world. But he also basically conceded something important to the skeptic by saying that the "noumenal" world cannot ever be understood or known in itself.
