- 1 cup uncooked white or brown rice
- 2 cups water
- 2 tablespoons vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup boneless, skinless chicken breast or thighs, cut into small pieces
- 1 cup mixed vegetables (bell peppers, carrots, green beans, broccoli)
- 2 teaspoons soy sauce
- 1 teaspoon oyster sauce (optional)
- Salt and pepper to taste
- Chopped green onions and sesame seeds for garnish (optional)
Instructions:
- Cook the rice according to package instructions using 2 cups of water.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the chopped onion and cook until it's translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute, until fragrant.
- Add the chicken and cook until it's browned and cooked through, about 5-6 minutes.
- Add the mixed vegetables and cook until they're tender, about 4-5 minutes.
- Add the soy sauce and oyster sauce (if using), and stir-fry everything together for another minute.
- Season with salt and pepper to taste.
- Serve the stir-fry over the cooked rice, garnished with chopped green onions and sesame seeds if desired.
