I believe when they start to flower it’s time to pull them up to eat. All the plant energy will go to the flower first and then to the seed production. You should try and leave one or two and let them flower and the seed. I would try a collect the seed(just for the experience of it.) it took me a long time to recognize the sycamore seeds and then to figure out how to spout them.

Yes, I had in mind to keep a few plants to collect seeds for the next season.
Every season learning some new things. We are far from perfect but it is a hobby and it is satisfying.
I had collected some Sycamore seeds a few years ago to "Google Image Search" and find out if that could have some medicinal benefits.
