Not exactly, let me explain you better. Grains are natural or modern as we decided depending on the plant. With these, a mill could produce a wholegrain Perciasacchi, using a stone mill, or a refined Perciasacchi using a cylinder mill. Clear ? Now back to the modern grains, a mill could do the same and have wholegrain modern grain or refined modern grain. There is also a tendency to produce fake wholegrain flour by actually adding the fiber to the refined flour in a second step. For this reason stone mill is only the real wholegrain. And you are right that this is because in the past, in the ancient time, we did not have technology to mill the grain so much to produce this refine flour... which is unhealthy of course.
