Doesn’t Craig explicitly advise for holding coins scattered among multiple wallets? Why would he suddenly hoard so many in one?

Depends on how you store it.
You can have multisig wallet and therefore have higher security, even though all coins are in one wallet.
maybe am exchane. but even exchanges divides their holdings into sub wallets.
