Recipe for Arugula Pesto.

INGREDIENTS:
- 100 gr. Arugula leaves.
- 100 gr. nuts (walnuts and/or pine nuts).
- 100 gr. cheese (Parmesan).
- 100 ml olive oil.
- 8 cloves of garlic.
- 10-12 black (Throumba) olives.
- 1/2 lemon juice.
PREPARATION:
1. Roast for 2-3 minutes the nuts and the garlic cloves.
2. Blend arugula leaves, nuts, garlic, olives & cheese in a smooth paste.
3. Add the lemon juice.
4. Fold or mix the olive oil in the mixture.
