You can check out an android custom ROM, which is called "GrapheneOS" and ironically only runs on Google Pixel devices.
I tried a lot of different custom ROM's over the years.
I started with cyanogenmod, then lineageos, then ubuntutouch and sailfishOS and finally ended up on GrapheneOS.
So far the best user experience I ever had.
It may be an intelligence agency honeypot, but at some point I just had to make a decision and went for it.
You can choose folders and files all apps can acces with "storage scopes" and a lot of google server backend calls have been either deactivated or replaced with other servers.

I know about Graphene OS. Watch the Video i attached on my post. They will restrict to install such things. ROM will be locked for certified (Digital ID required) Devs only. My offgrid phone is from murena, running on e/os.
That means you have the tiny computer in your pocket doing what the issuer and not the buyer wants. In germany the government wants to force the same rules to old vehicles. You won't be allowed to repair your old car. You will not even be able to keep them in your own garage. It needs to get a TÜV Certificate or you can't touch your OWN stuff.
