In essence using Twetch as a core of sorts and creating an independent franchise / brand which can “pop up” in multiple locations.
Because of the brand it connects these otherwise unconnected individuals and lends a hand to improved credibility over the medium to long term.

how does it pop up in multiple locations? your franchise seems to be mobile in nature while mine is static (a guy just makes 200 litres of beer a year in his garage and anyone can organise a purchase when he restocks on the app)
