There is the obvious answer of Temple Square downtown.
Temple Square is cool even if you have no interest in the religious aspect. They have a huge genealogy center, a bunch of cool presentations/movies/etc. about the history of the pioneers who moved to Salt Lake. And everyone is very nice.
