For soap making I always used EVOO (often certified organic too) just because it could be trusted a little more than the other types. “Pure” olive oil or even Pomace sometimes, is often cut with hazelnut oil, which can really affect a soap batch. Oils labeled “Extra Virgin” were more likely to be pure. Anyway People using my soap were getting some quality bars!! Just like your clients are getting high quality food!! Kudos!! Will we be able to buy some in Canada ever?

Pomace is the left over of many steps and you want to be far away. Pure or Extra is about acidity and I think the most important is 1. Origin 2. Production method and storage. Cold extraction of high quality olives done in a short period of time from the harvest is a what make a product different. Sicily origin why?
