If CO2 rises, plants grow bigger, but the nutrient and mineral levels may not keep up, which is why the ratio shifts in favor of carbs.
Carbs are carbon and are the C from CO2.
There are essential fatty acids and there are essential amino acids and proteines and also minerals and other "stuff" whichbI do not know the english words for.
But there are no essential carbo hydrates.
Conventional farmers also put nitrogen into the soil as a fertilizer. But according to some sources, the mineral levels of the soil may be very low, due to decades of farming. So the plants will grow and look nice, but in essence they consist mainly of nitrogen, water and carbon.
I am not deep enough into the topic, but thats my 2 cents on Ayres point of view or wjat he could mean.
However, I do not think, that genetic manipulation is the solution.

When the entity with all the power and money that you want to endorse and use your product offers you three options:
1: Open your mouth
2: Spread your cheeks
3: Post some nonsense that reinforces our nonsense and end game
