Allow me to answer it this way :
1) Your private keys never leave your device as the extension handles everything locally, no keys are ever sent to our servers or anywhere else. we did this on purpose so you have peace of mind. 
2) The extension only requests what it strictly needs to function. If you're or in doubt, you can verify this yourself by opening your browser's DevTools and inspecting the extension's network activity and permission manifest.
3) The source code is fully available. You don't have to take our word for it. We've made the code open so anyone can audit it, review it, or have an expert look at it.
3rd party audits are expensive and we are doing this project for FREE, so anyone who wants to audit the code, is more than welcome.

My final and honest opinion, Install it, play with it, if you feel comfortable use it, if not use other wallets, there are quite some good wallets already.
Satori will take time to get the trust it deserves, not something we can achieve the day we release the wallet :)
