Italian Dandelion also known as Chicory or Rumex Sanguineus is another very easy to grow vegetable which seems to have no "enemies" like Caterpillars, Slugs or Snails. I think the plant is too bitter for their taste. I like this plant a lot as it is another "cut-and-come-again" crop.

We consume the leaves raw or mix them in salads though most people prefer them sautéed in olive oil and garlic as this process takes away the bitter taste (slightly).

The plant is a nutrient-dense crop with very high level in Iron, Calcium, potassium and vitamins A, C, and K. It has significant health benefits like superior liver detoxification support, improved digestion due to its bitter compound. The richness in potassium and antioxidants aids in reducing blood pressure and inflammations.

The last weeks were really fantastic: we harvested every 2nd/3rd day Italian Dandelion in a "cut-and-come-again" manner and enjoyed them "ripassare" with oil and garlic, in soups, in fresh salads, smoothies and omelets.
I just love that pinch of bitterness they have in them.
Again there was so much available that at some point we started giving away to the neighbors.
From now on we will start blanching and freezing them and consume them on moments that it is too hot for these plants to be in the garden. Let's see how that goes. For everything there is a first time!
